Fat Tuesday, otherwise known as Paczki Day, is a day to indulge in the sweeter things in life. That’s why it’s one of the busiest days of the year for DeEtta’s Bakery.
“It’s kind of a controlled chaos because we have such a mass amount of product going out the door in such a short period of time. So it really entails a lot of planning weeks ahead of time. We’ve been talking about Tuesday, or Paczki Day, for really months even before Christmas of how we’re going to handle it,” said Kevin Tyschper, Owner of DeEtta’s Bakery.
A paczki is similar to a filled donut, but the dough is a little bit different. With more egg and butter, it’s much richer and denser.
Last year DeEtta’s sold nearly 3,000 paczkis, and this year, based on an increase in preorders, they’re baking roughly 5,000.
“Our preorders are up, probably about 50 to 60 percent of our prior year so we’re seeing a huge increase. We’re anticipating that to be on the walk-in side of the business. That overall increase, we’re prepared for it and we have the ability to make some more all day as we make them, but with any sort of yeast product it takes a few hours to make. So it takes a little bit of time, but we think we’re well prepared,” added Tyschper.
This deep fried dough is only available for one day, which makes for one delicious tradition.
