Solemn Oath brewery opened its doors in 2012, but it was long before that when brewmaster John Barley fell in love with the beer culture, wanting to incorporate the flavors he enjoyed into his own brewery.
“I grew up in Wisconsin and developed a passion for drinking Belgium beers in Belgium, then went to DePaul here in Chicago. I just decided it was something I wanted to do. I had never home brewed and never made a batch of beer until we turned our system on here for the first time. I just fell in love with the culture of beer, it really drew me in and I haven’t been able to stop,” said Barley.
With the popularity of craft brews on the rise, Solemn Oath focuses on bringing the unique flavors to the burbs.
“We are very fortunate here in Chicagoland, there are a lot of great breweries doing some interesting stuff. The Chicagoland community is really on the forefront of what’s going on in the craft beer scene nationally. We focus on really high quality beers, we focus on good customer experience making sure everyone is having fun and engaging with our beer really well,” he said.
The Belgium inspired beer styles mixed with a few American Ale and IPA have proved to be a success; allowing the facility to expand this year.
“Just a couple of weeks ago we actually turned a new brew house on that allows us to make about six times as much beer in the same time, we took another 100% capacity expansion so we’ve got the opportunity to make a lot more beer,” Barley said.
And if you don’t want to enjoy your brew on site at you can take it home as well.
“We package beer, we keg beer, and we bottle it. In the next month or so we are going to get a canning line so that will be kicking six packs out,” said Barley.
